Our award-winning chef of Tomata restaurant, Chrysanthos Karamolengos suggests a quick and easy recipe to try in your kitchen!

Pork marinated in rosemary with mustard sauce
Serves 4

1 kg rounds of tenderloin pork fillet
1 teaspoon freshly ground pepper
3 tablespoons fresh rosemary, chopped
1 teaspoon fennel seeds
½ teaspoon chilli flakes
Juice of half a lemon
½ clove of garlic
2 tablespoons olive oil
Feta cheese in small cubes
Salt and pepper

For the sauce

125ml olive oil
40ml lemon juice
15ml sherry vinegar
1 teaspoon Dijon mustard
Salt and pepper

First mix all the ingredients for the mustard sauce together and gradually add the 125 ml of olive oil.
Put the meat in a pan. Mix all the ingredients for the marinade, add them to the meat and marinate for 30 minutes. Grill the meat on both sides, add the mustard sauce and sprinkle with the small cubes of feta cheese. Serve up with fried or oven potatoes. Delicious!!
