Paco Morales

In 2010, Paco Morales earned his first Michelin star with his eponymous restaurant at the Hotel Ferrero in Bocairente. However, it was his ambitious venture, NOOR, launched in his hometown of Córdoba in 2016, which truly showcased his culinary vision.

Reinterpreting Andalusian cuisine through meticulous historical research of Al-Andalus gastronomy and blending influences from the three cultures – Judaism, Islam and Christianity - that shaped Andalusian cuisine, NOOR garnered two Michelin stars in just over three years.

Chef Morales will open this year’s annual celebration of haute cuisine, Sani Gourmet, with an exclusive dinner at Elia restaurant on July 26th.
